4.5# American Wheat

2 oz Amarillo Hops (divided)

5.5# American 2-row

1 oz Sweet Orange Peel

1# Flaked Wheat

0.75# Rice Hulls

YEAST

PROCESS:

1.    Clean and sanitize EVERYTHING.

2.    Heat 24 quarts of water to 165 degrees F.  Add to grain in mash tun.

3.    Allow to sit (mash) for 60 minutes.

4.    Drain liquid (wort) from mash tun into kettle while showering additional hot water over over grains (sparging) until draining wort no longer tastes sweet.

5.    Bring wort to a boil.  WATCH FOR HOT BREAK and turn down heat when it begins to prevent boil-over.

6.    Immediately after hot break add 0.5 oz Amarillo hops and set countdown timer for 60 minutes.

7.  At 15 minutes add yeast nutrient.

8.  At 0 minutes turn off heat and add (use a hop sock) sweet orange peel 1.5 oz Amarillo.

9.  Let steep for 30 minutes.

10. Chill to 65 degrees, check gravity, pitch yeast.

11. Place in primary fermentor, close fermentor and apply airlock.

13. Ferment for 2+ weeks.

14. Keg, pressurize to 10 PSI.

15. Share and Enjoy!


This was my first foray into less traditional beers. I had some technical problems in production leading to loss of product (the bung came out of my mash tun...what a mess).  I tried to adjust amounts, but the final product just wasn't very good.  Will have to try this again.
